  1. Es sal: empieza con poca. Una cucharadita rasa por cada 500 g de comida, pruebas, y no le agregas sal aparte.
  2. En guisos, arroces y sofritos, échala al principio; a la plancha, a la parrilla o frito, al final.
  3. Guárdala bien cerrada y usa siempre una cuchara seca.
  1. It's salt: start with a little. One level teaspoon per 500 g (about 1 lb) of food, taste, and don't add extra salt.
  2. In stews, rice and sofrito, add it at the start; on the griddle, on the grill or fried, add it at the end.
  3. Keep it sealed tight and always use a dry spoon.

La historiaThe story

Todo empezó con una nevera llenaIt all started with a full fridge

El Tarantin nació en 2019 en Pamplona, Norte de Santander: un restaurante familiar que juntaba la cocina colombiana y la venezolana en un mismo plato.

Seis meses después, la pandemia nos cerró las puertas y nos dejó una nevera llena de frutas, verduras y hortalizas que los campesinos de la región habían cultivado con esfuerzo.

En esta familia, botar comida nunca fue una opción.

Aprendimos a deshidratarlas para alargarles la vida y conservar su sabor, las mezclamos con sal marina y así nacieron nuestros sazonadores.

Lo que empezó como supervivencia terminó en invención: aprovecharlo todo, no desperdiciar nada.

En Pamplona compramos los excedentes de cosecha para que nada se pierda en el campo, y trabajamos con las mujeres de la Asociación de Mujeres Emprendedoras del Cristo Rey.

De una cocina pequeña en Pamplona hasta la tuya.

El Tarantin was born in 2019 in Pamplona, Colombia: a family restaurant bringing Colombian and Venezuelan cooking together on one plate.

Six months later, the pandemic closed our doors and left us with a fridge full of fruits, vegetables and greens that local farmers had grown with great effort.

In this family, throwing food away was never an option.

We learned to dehydrate them to make them last and keep their flavor, blended them with sea salt, and that's how our seasonings were born.

What started as survival ended up as invention: use everything, waste nothing.

In Pamplona we buy surplus harvests so nothing is lost in the field, and we work with the women of the Cristo Rey Women Entrepreneurs Association.

Roble fue el segundo nombre de la Sal de Cerveza Negra (Carne → Roble → Cerveza); esta nació el 13-ago-2026 para reemplazarla en EE. UU. y recupera el nombre que su madre tuvo de joven.

Se llama Roble por los robledales de Pamplona (el roble andino, Quercus humboldtii); la sal se ahúma 48 horas en frío sobre aliso, el otro árbol de nuestra montaña.

Roble was the second name of the Sal de Cerveza Negra (Carne → Roble → Cerveza); this one was born on August 13, 2026 to replace it in the U.S., and it brings back the name its mother had when she was young.

It's called Roble after the oak groves of Pamplona (the Andean oak, Quercus humboldtii); the salt is cold-smoked for 48 hours over alder, the other tree of our mountains.
