Pollo al curry de una sola sarténOne-Skillet Chicken Curry

  • 600 g de pechuga o muslo en cubos
  • 1 cebolla picada
  • 1 lata de leche de coco (400 ml)
  • 2 cucharaditas de Sal Masala
  • 1 cucharada de aceite
  • Cilantro
  • 600 g (1⅓ lb) chicken breast or thigh, cubed
  • 1 onion, chopped
  • 1 can of coconut milk (400 ml / 13.5 fl oz)
  • 2 teaspoons Sal Masala
  • 1 tablespoon oil
  • Cilantro

Paso a pasoStep by step

  1. Dora el pollo en el aceite a fuego alto, 4 minutos, sin moverlo mucho. Sácalo y resérvalo.

  2. En la misma sartén, sofríe la cebolla 3 minutos con lo que quedó pegado.

  3. Baja el fuego, echa la Sal Masala y revuelve 1 minuto en el aceite caliente. Este paso es obligatorio: las especias necesitan grasa para soltar el sabor. En agua saben a polvo.

  4. Devuelve el pollo, echa la leche de coco y deja 8 minutos a fuego medio, hasta que espese. Prueba antes de servir: la leche de coco endulza y tapa la sal, así que sabe menos salado de lo que está.

  5. Cilantro picado por encima. Con arroz blanco.

  1. Brown the chicken in the oil over high heat, 4 minutes, without moving it much. Take it out and set it aside.

  2. In the same skillet, cook the onion for 3 minutes with the browned bits left in the pan.

  3. Lower the heat, add the Sal Masala and stir for 1 minute in the hot oil. This step is a must: spices need fat to release their flavor. In water they taste like dust.

  4. Return the chicken, pour in the coconut milk and let it cook 8 minutes over medium heat, until it thickens. Taste before serving: coconut milk sweetens and masks the salt, so it tastes less salty than it is.

  5. Chopped cilantro on top. Serve with white rice.

El Tarantin nació en 2019 en Pamplona, Norte de Santander: un restaurante familiar que juntaba la cocina colombiana y la venezolana en un mismo plato.

Seis meses después, la pandemia nos cerró las puertas y nos dejó una nevera llena de frutas, verduras y hortalizas que los campesinos de la región habían cultivado con esfuerzo.

En esta familia, botar comida nunca fue una opción.

Aprendimos a deshidratarlas para alargarles la vida y conservar su sabor, las mezclamos con sal marina y así nacieron nuestros sazonadores.

Lo que empezó como supervivencia terminó en invención: aprovecharlo todo, no desperdiciar nada.

En Pamplona compramos los excedentes de cosecha para que nada se pierda en el campo, y trabajamos con las mujeres de la Asociación de Mujeres Emprendedoras del Cristo Rey.

De una cocina pequeña en Pamplona hasta la tuya.

El Tarantin was born in 2019 in Pamplona, Colombia: a family restaurant bringing Colombian and Venezuelan cooking together on one plate.

Six months later, the pandemic closed our doors and left us with a fridge full of fruits, vegetables and greens that local farmers had grown with great effort.

In this family, throwing food away was never an option.

We learned to dehydrate them to make them last and keep their flavor, blended them with sea salt, and that's how our seasonings were born.

What started as survival ended up as invention: use everything, waste nothing.

In Pamplona we buy surplus harvests so nothing is lost in the field, and we work with the women of the Cristo Rey Women Entrepreneurs Association.
